Andalusia, and above all the province of Jaén, is the single most important olive-oil landscape in the world. Endless rolling groves — over sixty million trees in Jaén alone — make Spain the largest producer by a wide margin, and Picual the dominant variety. The region's oils range from the robust, peppery Picual of Jaén to the rounder Hojiblanca and Picudo of Córdoba and Málaga, protected by a dense web of PDOs (Baena, Priego de Córdoba, Sierra Mágina and more).
