Souri (the name points to the ancient Phoenician city of Tyre, Sour) is among the oldest cultivated olive varieties on earth, native to the Levant and central to the cuisines of Lebanon, Palestine and Syria. The oil is robust and green: fresh herbs, tomato and grass with a firm bitterness and a strong peppery pungency, and a naturally high polyphenol content. Grown on ancient, drought-hardy trees, it is prized for both intensity and longevity.
