Italy · Puglia (Bari & Andria)

The heavyweight. Intensely bitter and pepper-pungent with green almond and artichoke — and one of the highest polyphenol loads of any variety.

Profile

Coratina, the dominant olive of northern Puglia, produces one of the most powerful and polyphenol-rich oils in the world. It is uncompromising: aggressive green-almond bitterness, a fierce peppery pungency that grabs the throat, and dense artichoke and bitter-greens character. That intensity is a feature, not a flaw — it signals a huge antioxidant load, exceptional stability, and an oil built to stand up to robust food. Newcomers find it challenging; enthusiasts seek it out.
